This was a delicious dish I ate at Amsterdam airport while coming back from holidays. Days later I decided to recreate t in my kitchen, so delicious!
350 gr. Penne of your choice
1-2 chillies (take out seeds if you don’t like spicy)
1 can tomatoes
1 small shallot
2 cloves garlic
85 gr. fresh mushrooms
30 gr. olives (opcional)
Sal and pepper
3-4 tbsp olive oil
1/2 tsp brown sugar
A handful basil leaves
1. Prepare the penne according to instructions on the package.
2. Peel the shallot and garlic to small dice. Put it in a medium pan with the olive oil, sauté, and when translucent add in the can of tomatoes, salt, pepper and sugar.
3. When soft and creamy add in the chillies chopped up, olives broken into pieces and the sliced mushrooms. Add in half the portion of basil. Serve with the penne and decorate with more basil.
