These little treats were so good- great for when you have a sweet craving, and so easy to make too! And by the way- it takes about 5 minutes to prepare;)
13 big medjool dates
3-4 tbsp coconut flakes
1 small cup oats
1 small banana
1/3 cup soaked cashews
2 tbsp peanut butter
1/2 tsp cinnamon powder
1. Pre-heat the oven to 175º.
2. Put all the ingredients in a food processor and blitz. Scrape down the sides as needed and continue pulsing until you get a nice, shaped ball. Let cool for 5 minutes in the refrigerator.
3. Scoop out the mixture, form balls and press slightly to shape them into cookies. Transfer the cookies to a baking tray with parchment paper and bake in the oven for 10 minutes.
Take them out and let cool completely before serving.
