I made these amazing cookies on Sunday and they were a total hit! My boyfriend and I were in search for something indulgent but for me there was the number 1 rule: it needed to be vegan! After a while searching for the best recipe, our eyes caught the attention for these ones, which I then veganized:)) they are so quick and easy to make you will not even believe it! Crunchy outside and moist on the inside too ❤
(Veganized recipe, inspired from All recipes)
1/2 cup butter, softened
1/2 cup peanut butter
1 1/2 cup packed brown sugar
4-5 tbsp plant based milk
2 tablespoons light corn syrup (I used agave nectar)
2 tablespoons water
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups chopped vegan semisweet chocolate
1. Preheat oven to 375 degrees F (190 degrees C).
2. In a large bowl, cream together the butter, peanut butter and brown sugar until smooth. Beat in the milk and then stir in the agave and water. Combine the flour, baking soda, and salt; stir into the peanut butter mixture. Fold in chocolate chunks. Drop by 1/4 cupfuls 3 inches apart onto ungreased baking sheets.
3. Bake for about 9 minutes in the preheated oven, or until edges are golden. Allow cookies to cool for 1 minute on the cookie sheet before removing to wire racks to cool completely.
