It’s been a while since I prepared my last couscous salad. I love the flavors so much, and the versatility of it is just mind blowing. With just simple ingredients you can create the most rich, nutrient dense meal, that will fill you up and leave you satisfied! This couscous salad is great for summer or as a side dish to any plant-based option you might have on hand.:)

Ingredients: ❤

1/2 cup dried couscous
85 gr. frozen peas
1/2 cooked lentils of your choice
1 small tomato
1 clove garlic
1 tbsp coconut oil
1 tbsp fresh mint, chopped finely
1/2 tsbp smoked paprika
1/2 tbsp dried oregano
1/2 tbsp sea salt/himalayan salt

Preparation: ❤

1. Prepare couscous according to the instructions on the package. Season with the smoked paprika, salt, pepper, oregano.

2. Put the coconut oil on a pan and heat it up. Add in the minced garlic and the peas. Let cook for a few seconds, max. 1 minute.

3. Assemble everything by mixing the couscous, peas and lentils in a bowl. Add in the fresh mint and the tomato, finely chopped. Mix everything to incorporate flavors. Taste for seasoning and serve.
