It had been a while since I last ate sweet potato, I love how its caramelized sweet flavors go with this sauce, simple to make and delicious for any occasion.:-)
Ingredients: (2 people) ❤
4 medium size sweet potatoes
4 big tbsp tahini
Juice of 1 lemon
4-5 tbsp water
1/2 tsp crushed rosemary
1/2 tbsp crushed mixed peppers
Coarse salt to taste(optional)
1. Prick the sweet potatoes in several places, place them in an oven tray. Bake them at a pre-heated oven (180º) for about 45m-1h.
2. To prepare the tahini sauce, place the tahini with the lemon juice and water in a bowl and whisk. Season with the salt and pepper.
3. Serve the sweet potatoes with a salad and pour the sauce over. Sprinkle with the rosemary and serve.
