An inspiration that came from my shopping trip to the supermarket!:)
You know those days when you just want a really comforting chocolate treat that doesn’t necessarily have to compromise your health? Exactly me today:)
Packed with nutrients, this is the perfect dessert to prepare for you and your loved ones.
A handful of walnuts, grinded (about 4 tbsp)
1 can coconut cream
3 tbsp almond meal
4-5 tbsp agave nectar (you can use raw honey)
2-3 tbsp raw cacao nibs
3 tbsp cacao powder
50 gr. raspberries
50 gr. blueberries
A pinch of cinnamon powder
1. Prepare the base first: in a bowl add in 2 tbsp agave, cinnamon powder, the walnuts and almond meal. Mix in until you get a sandy mixture. Spread over 2 cups forming a base, like you do when preparing a cheesecake (save a bit for the decoration at the end).
2. On a separate bowl, mix in the coconut cream, cacao nibs, the rest of the agave syrup and cacao powder. Taste the mixture and adjust to your liking.
3. Pour the mixture over the cups and spread few blueberries half way. Decorate with the rest of berries, the crumbly mixture and few cacao nibs. Refrigerate for at least 2-3 hours before serving.
