Creamy Almond Oatmeal with berries #86

Ingredients: ❤

1 cup oats
2 cups almond milk
1 to 1/2 cup warm water
6-8 tbsp raw maple syrup
3 tbsp maple sugar
1 tsp coconut oil
1 tsp cinnamon powder
1 apple
85 gr. red fruits of your choice

Preparation: ❤

1. Put the oats in a pan with the almond milk and water. Bring to medium heat and let simmer. Cook then in low heat and add the maple syrup and cinnamon.

2. Cook for around 10 minutes stirring regularly. Add in the coconut oil and let cool a bit.

3. Cut and peel the apples and serve them in a bowl, together with the oatmeal, berries and the maple sugar sprinkled on top.

Shepherd’s Pie (Veganized) #73

One of the biggest challenges when having a non-vegan boyfriend that comes for the weekend, is trying to veganize dishes but keep them full of flavor as well! I normally prefer to have simple foods for my meals (for example, I would be so happy with just a bowl of steamed potatoes right now, romain and a sprinkle of olive oil and pepper, and I’m not even kidding:) ) But I also love to recreate my dishes to non-vegans and make meals that they can refer to. This creamy oatmeal (also called porridge in the UK) is seriously one of the best breakfast ideas I could have asked for this week! As the winter becomes more vigorous, I feel in need for some warming foods as I wake up. I love to combine the oatmeal with juicy fruits like mango or even berries.
