I love vegan recipes that are minimumly processed! Sure, not all of them can be 100% free from fat, but it is still rewarding to think you can dig in something naughty & delicious, while getting some goodness from it.
Do you know those dishes that you miss enormously when you switch to a vegan diet? For me, spaghetti alla carbonara was one of them, that creaminess, oh yum! Best part: this one is oil and dairy free:)
